So we try to be healthy, and GI is devenetly our enemy. Lowering GI in our diet is a must, no debate here, but mostly low GI foods and drinks are not tasty.
The Glycemic Index (GI) is a measure used to indicate how fast carbohydrates contained in food can be converted into sugar by the human body. This size is a scale from 0-100. For example, pure sugar, for example, has a glycemic index number of 100, this means that carbohydrates in pure sugar are very quickly converted by the body into sugar for energy for the body. The glycemic index can also inform how food influences blood sugar and insulin levels. The lower the glycemic index value, the less effect on insulin level and blood sugar levels.
At first, carbohydrates are classified into two, simple carbohydrates and complex carbohydrates depending on how much simple sugar is contained in the molecule. Carbohydrates consisting of one or two simple sugars (like fructose or sucrose) are called simple carbohydrates. While starchy foods are called complex carbohydrates because starch is composed of a long chain of simple sugars, namely glucose.
The suggestion to consume more complex carbohydrates than simple carbohydrates comes from the assumption that starchy foods only raise a little blood sugar levels after being digested compared to simple sugars. This assumption is considered inappropriate because the response of blood sugar to each type of food with complex hydrophobia varies. So from that the concept of the glycemic index was triggered where each food was measured how much effect it had on blood sugar levels.
Coconut sugar (also known as coco sugar, coconut palm sugar, coco sap sugar or coconut blossom sugar) is a palm sugar produced from the sap of the flower bud stem of the coconut palm. Other types of palm sugar are made from the Palmyra palm, the date palm, the sugar date palm, the sago palm or the sugar palm.
This morning we tested some coco sugar with toraja coffee and I a little bit disappointed. Yes it's better than regular table sugar in term of GI but the taste...….. big no to me .
Verdict:
Taste (for me) = T. Sugar >> No Sugar >> Coconut Sugar
Low GI = No Sugar>> CocoSugar>>T. Sugar
Overall = T. Sugar/ No Sugar>> Coco Sugar
